Peas and Mint soup – using fresh sweet winter peas !!

This creamy pea and mint soup may not find its place in restaurant menus but it is just so good that you absolutely have to try it. In india we are used to making different curries and fillings with peas but never soup.

This peas and mint soup is a classic vegetarian British recipe that I enjoyed during my stay in London. Pea and mint soup is creamy without the addition of a lot of extra cream, the starch from the peas lends it a beautiful silky texture and the mint adds so much flavour to the soup.

This soup tastes best when fresh and sweet winter peas are used. Seasonal peas have a wonderful sweet taste that just takes this soup to the next level. But you can also use Frozen peas for the recipe. You may neeed to add a pinch of sugar to compensate for the sweet taste . With some warm buttered toast this is a very simple weeknight, lazy diner recipe , besides being the perfect excuse to include seasonal food in our meals !!

PEAS AND MINT SOUP – FRESH AND HEALTHY

Ingredients

Butter – 1 Tbsp

Onions – 1 medium / 50 gms

Peas – 1 cup or 150 gms

Water – 1.5 cups

Salt to taste

Sugar – 1/2 tsp

Pepper – To Taste

Mint – 2 Tbsp

Cream – 2 Tbsp


Instructions

  1. In a pan, melt the butter. Add in the onion and saute till they are translucent.
  2. Add in the peas and water. Bring to a boil , cover and cook till the peas are soft and mushy .
  3. Switch off the flame and allow to cool.
  4. Add in the salt, sugar, cream and mint leaves.
  5. Puree this mixture.
  6. Add the puree back into the pan , season with pepper and bring to a boil again.
  7. Serve hot !!
